70 hours worked in 5 days, now for 2 days rest which for me means the joy of cooking and not eating ready meals at work.

what i find is, although ready meals are handy for people like me working long hours at night, i always feels like crap and have no go in me.

after a couple of days of using fresh meat and veg, i feel alot more alert and better within myself.

Had something different today...wife asked what I fancied, I said 'dunno, something wet, feeling a bit dehydrated'.

She said 'what? soup or something?'
'Nah', I said, 'feel like fish'.

So she made a fish chowder, I've heard the term 'chowder' before but didn't really know what it was.  She had salmon, prawns, and something else in there (herring I think, not sure) with whatever else there was in it.

Quite nice as it happened, it sounds 'orrible but its worth a try if you never head it...she served it up with warm crusty rolls.  Beautiful.

i've had clam chowder and crusty bread which is nice.

changing the subject to the food of gods.... beef.

now when i was younger i used to like my steaks well done (i.e thats the only way my mum knew how to cook them so i had no choice)

since then, if my steak isnt the rarest of rare then i wont eat it.

its got so bad that ive been eating home made steak tartare more frequently (with a raw egg yoke resting in a dip on the top)

so last night at work what did i take to work for dinner?

500g of raw steak and munched on that.

last saturday we had tuna steaks served with new potatos and rice with onions, peas and tumeric.

the wife will only eat her tuna steak if its cooked all the way through.

I had mine flash fried. in other words, i fried it quickly in olive oil for seconds on all 4 sides so only the very outer was cooked. i then reduced some balsamic vinegar in the same pan and poured over the top.

lovely

anyone watching 'the great british menu'?

last nights fish dish round was 7 top chefs at the top of their game.

personally i thought jason atherton should have won the starter with his take on the BLT and also the fish round.

tonight it's the main course so should be good viewing. assuming youre a foodie like me

Dexter cattle are a particular cattle breed, Brisket is simply one of the cheapest beef joints.

We just got a 10kg assortment from a small farmer whose farm site I host

As the family is out doing different things over the weekend, we are having our sunday lunch today.

Its cooking at the moment.. Im making roast beef, cooked with a garlic and herb crust over the top. And we are having with it, roasted potatoes, that have been par-boiled with garlic, basil and coriander. Im also making steamed carrots and brussel sprouts, which is being steamed with some different herbs, with couliflower cheese. And to go with that, we are having a red wine-based gravy - Home made of course.

And for desert, we have steamed Sticky Toffee Pudding with custard. Didnt make that myself, we got it from a really nice place near us that makes them all, then sells them raw, ready for cooking at home.

tonight!

flash fried tuna steaks (by that i mean cooked in a pan with olive oil for only seconds on each side, makes for a lovely raw middle)

served with basmati rice which was fried in a pan with sweet onion, fresh peas, tumeric and seasoning.

on the plate i placed a heffing great slice of beef tomato in the middle and drizzled aged balsamic vinegar over it, then placed the tuna steak resting on top. the rice was placed to the side and a few salad leaves to the left in an artistic style.

beside beef steak, tuna steaks done rare are my fav
