A pretty simple question really.

My version 3 forum is how I want it to be, once I run the conversion one more time as posts have been made on the version 2 forum how long once I confirm I want to move to version 3 will the change happen?

I don't want to force the upgrade as I want to keep a copy of the forum in version 2 but obviously I will have to disable the old version to prevent anymore posts beeing made.

The force option does not remove your version2 forum, it just renders it inaccessible as whilst the force is in place attempts to get there will be redirected to phpbb3.
When you make a forum phpbb3 then it can take 48 hours before people get automatically taken to phpbb3 as the new address can take that long to "propagate" as that is simply the way the net works.

Just to add once I confirm the upgrade can I still work on the forum using this address - http://drewschofield.slarti3.myfreeforum.org or will any changes I make not show?

The slarti3 version is the phpbb3 version, changes you make there will be seen by anyone seeing a phpbb3 version of your forum. There are only ever two versions of your forum one phpbb2 forum and one phpbb3 forum. You may have two addresses for a forum, but it will be the same forum.

This is probably a stupid question but once the upgrade takes place the forum can be access by using http://drewschofield.myfreeforum.org rather than having slarti3 in it?

That is the point of the upgrade button. It changes the forum so that the normal forum link will go to the phpbb3 forum. This is the bit that takes time and is the point of the "force" bit. Until full propagation happens you will continue to be redirected to the slarti3 link.
