HI does anyone know of or have any football templates? i have a football site and want to make the template  football based if poss?

There is one called Justfooty. Almost at the end of the list under the template styles list.

is there any way to change the background colour on a template ??

for example my justfooty template has a white  background with green forum headers .. but really would be better to have black background so that the text etc stands out better ?

This link helped me. It's about putting an image in the background, but it also shows you where the background color is listed. You just need to change that hex # to what you want. Make sure you use the editor user, though before you do it. Hope that helps.
